Chocolate & Banana Oat Muffins

Ingredients

  • 1/2 cup instant oats
  • 1/2 cup allpurpose flour
  • 1 teaspoon baking powder
  • 4 tablespoon Nesquik cocoa
  • 2 small bananas (ripe)
  • 1 egg
  • 1 teaspoon vanilla
  • 3 tablespoons oil (sunflower or coconut)
  • 2 tablespoons honey
  • 2 tablespoons dark chocolate chips
  • 1 tablespoon instant oats (to decorate)

Cooking Directions/Instructions

  • Place oats in a blender/ food processor and pulse until they turn into powder
  • Add flour, baking powder and Nesquik cocoa and give it another quick blend
  • Follow with sliced bananas, egg, vanilla, oil and honey
  • Blend all ingredients into a smooth batter. Don't over mix
  • Line a muffin tray with muffin cases or brush with oil
  • Fill the muffin cases 3/4 full, and top each muffin with chocolate chips and sprinkle oats
  • Bake in a 180C pre-heated oven for about 15 minutes or until risen and a skewer inserted in the middle comes out clean
  • Leave the muffins to cool for a few minutes then transfer to cool completely on a wire rack or a plate
  • Best served with Nesquik chocolate milk!
